Just call me Bev: Fat mole salad

In my quest to stop shovelling piece after piece of white bread into my mouth I’ve been embracing the salad with gusto. If I am going to eat a salad DEAR LORD it better be tastier than some tomato and cucumber. I went to Harris Farm on Monday morning and stocked up on tasty salad goods. Some rocket, cabbages, spinach, ice berg, corn and a shitload of herbs – basil/mint/coriander/parsley/dill/chives – if you have herbs, you have flavour.Yesterday I created a salad that was so good it deserves it’s own recipe. I’d never made it before, I made it up as I went along, but it was sensational. Seriously. Rob was quite beside himself. ABOUT A SALAD.Make this if you can. It’s an order. And who cares if it’s not really healthy and filled with activated almonds, it’s a SALAD.

Stop being a fat mole salad (serves 2 pigs probably should be 4)
: Rocket (good handful)
: Red cabbage (quarter)
: Corn (1 cob but I would use 2 next time)
: Mint (a fistful of leaves torn off)
: 2 chorizos
: 1/2 packet of fetta
Dressing
: clove of garlic grated on micro plane or minced
: juice of half a lemon
: good splodge of olive oil
: salt & pepps

: Fry up your chorizos in a pan (throw in without anything else as they release a lot of oil) until crispy and then drain on paper towel and set aside

: Into a bowl throw the rocket and shred the cabbage. Tear the mint leaves off the bunch and add into the bowl

: Boil your corn cobs in salted water for about 4 mins and then cut kernels off and add into the bowl

: Toss in the chorizo, crumble over the fetta in your hands and add the dressing and toss the whole thing and demolish.

  4. Sounds good. It’s no on my salad repertoire. I had a good one last night with salmon, egg, lettuce, cucumber, tomato, fetta, snow peas and my kick-ass salad dressing.

  5. Ooh yum, accidentally made something very similar the other night when I had next-to-nothing in the fridge. A big handful of fresh mint sure makes up for the lack of other stuff. But man, I didn’t have chorizo in mine – what was I thinking?

  7. BOOM, there is the salad I am now making to go with dinner. I have everything listed (excpet Chorizo) and it will go very nicely with the chicken I intend to marinate & BBQ later. Will be a change to use my mint from the garden for somewthing else other than Mojitos 😉

  8. I made this last night to go with some steaks that I had marinating in the fridge (after seeing it on your fb status update earlier in the day). Twas lick ya lips delish. I left out the chorizo this time but will include it next time and serve for lunch as you did.

  14. Sounds good, minus the corn …I bloody hate corn! Summer is salad time isn’t it? So much easier to eat a salad when it’s warm & the sun is shining 🙂

  19. Delicious! so whilst I didn’t quite have everything this recipe required I had the chorizo, red cabbage, feta and stuff for the dressing. I threw in some left over roasted pumpkin and baby spinach and this was amazing! Thanks for tips. Trying to ban myself from having boring lunche and obvs not be a fat mole for christmas!
