Just call me Bev: Banana Bread

Do you hear that? It’s silence. My children are in bed and I couldn’t be happier with that result. School went back today and I had two emotional ladies on my hands. Harper was BESIDE herself this morning in floods of tears because Daisy was “leaving” her for the day. Daisy did remarkably well and pulled herself together and headed off without a sideways glance (phew). I? Well I had a very normal day, washing and getting back into the School term groove – I think I need the routine just as much as they do.

I had some over ripe bananas ready for the bin, a two year old who told me she was “HUNGRY” every 5-7 minutes so there was just ONE thing to do. Bake the shit out of some banana bread.

Bev’s Banana Bread
: 1 & 3/4 cups SR flour
: 1/4 cup plain flour
: 1 teaspoon ground cinnamon
: 2/3 cup brown sugar (pack it in nice and tight)
: 1/2 cup milk
: 2 eggs
: 50 grams butter melted
: 2 over ripe bananas (I used three because I am greedy)

: Get the hungry kid to mash the bananas

: Sift all the dry ingredients together and make a well in the centre

: Add all the wet ingredients to the mashed banana then mix the two together

: Line & grease a loaf tin & bake in 180 degree oven for 45-50 mins (or when skewer comes out clean)

: Tell hungry kid to go and sit out in the winter sunshine

: And watch that cake get smashed. Leave remainder on bench for you to pick at each and every time you go into the kitchen which is A LOT. I eat my cake just like that too.

    The Baby stayed awake for about 20 seconds after Old Mr FF arrived home from golf and was tucked in at 6.40 pm. Bliss.

  6. Dude, I have a bunch of bananas in my freezer for any such time that banana bread is required. I just peel em, slice em up, bang em in a ziplock and bam – you can have banana cake any old day of the week. I’m particularly proud of my banana baking repertoire! Bravo Bethy!

  12. I use the same receipe but add a little cinnamon in the batter and sprinkle raw sugar on the top before it goes in the oven…. HEAVEN!!!! Stuff the kids…never makes it that far the adults usually gorge first

    I hate the dried up things any other time but in fresh hot banana bread OH MAH GAH.

  15. This is seriously the yummiest banana bread recipe. I made it recently too and I had every intention that it would serve as an afternoon snack for the following few days. It didn’t last til dinner time.
