Just call me Bev: Moroccan spiced salmon

I am ashamed, ashamed I tell you that it’s been SO long since I posted a recipe. It’s OK. I know. My focus has been elsewhere. But I’m back. OH BOY AM I BACK. I hope you’ll have me. Last week at Friday drinks at the pub post School pick up I was chatting with one of the Mum’s about dinner. I am quite obsessed with learning what people cook each night, who does the cooking etc, and will question with open curiosity. Nay, gay abandon! So I was sitting there with one of the Mum’s who told me that she was having salmon for dinner. And on a Friday nonetheless! Fancy. Then she proceeded to tell me that she was having ALDI salmon for dinner. I have spied that salmon in Aldi and wondered and pondered about it. It was just the encouragement I needed to pick up a pack of Tasmanian Salmon on the weekly shop. Note: we have NO seafood shops around here. None. The closest fish market is a good 40 min drive down to the coast. And extra note: you can now purchase Moet in Aldi. For $49 a pop. Enough said. I got that salmon, had a chat to Mum on the blower and got a fav recipe of hers that I just knew would work, and I cooked it. I cooked it good.

Recipe is originally taken/adapted from my Mum’s cookbook “More Please” a delicious series by Valli Little

Moroccan Spiced Salmon
: 2 smallish pieces of salmon

Marinade/rub for the fish
: 1 teaspoon paprika
: 1/2 teaspoon ground tumeric
: 2 teaspoons ground coriander
: 2 teaspoons ground cumin
: 2 garlic cloves
: 1 tablespoon lemon juice
: 1/4 cup fresh coriander
: 1/4 olive oil

Lemon dressing
: 1/2 cup whole egg mayo
: 2 tablespoons sour cream
: chopped coriander
: Juice of lemon & zest

: Chuck everything mentioned above for the rub into a food processor and blitz until finely chopped

: Rub onto the salmon and set aside covered in the fridge for 30 mins

: In a separate bowl whack in all the stuff you need from the dressing. The original recipe calls for preserved lemon but I didn’t have any so used lemon juice & zest instead. Mix and set aside

: After 30 mins chuck that salmon into a hot pan with a wee bit of oil. Remember that the marinade has oil in it so you don’t need much. Cook for 4 mins each side. You want it to be pink in the middle. Do not, I repeat, DO NOT be afraid of cooking fish. You can and will do this.

: Serve with lemon wedges and potatoes if you are greedy like me. I also made a simple “drunken salad” which is just shredded iceberg drowned in a WHOLE lot of lemon juice, oil and salt. LOTS of salt.

This was delicious. Rob was amazed that I trotted out some fish for a change. The girls had cutlets instead because I knew they wouldn’t eat it but next time I will force them to have and I know they will love it. Oh yes they will.

Enjoy!

  4. Fish? on a Friday? how Catholic! if the ingredients look interesting, I will ask people at the checkout what they are having for dinner. Love this LOVE IT.

  5. that looks AMAZING! we used to get aldi salmon often when we lived closer to one. Perhaps Ill have to take the drive up there.
    thanks for sharing

  6. We also don’t have access to fresh fish apart from the local non chain supermarket. It comes in fresh on Tuesday nights but is rather expensive. We don’t eat fish that much as a result. THIS looks delicious. Well done (and welcome back Bev)

  7. YUM! We eat fish at least twice a week in our house (we have an ah-mazing fish shop five min walk from home) but I’m always looking for new ways to cook it. This is on the meal plan for next week.

  8. why am i, nay all of humanity, afraid of cooking fish? the results are so damn tasty when we give it a try!! guess what i am having for dinner on the weekend (i’m anal retentive and already have my week’s menu planned, bought and ready to go!)…thanks bev!

  9. You need to hop onto the Vogue.com.au forums about what people are cooking for dinner every night- Fascinating. I do all the cooking as Mr FF is either away or gets home at about 9pm. But sometimes he cooks…I remember it like yesterday.

You cannot buy booze in QLD supermarkets. I know. I’m sad too.

    I eat fish a lot. I don’t know why. It’s just how I roll.

Hope the garden’s trucking along nicely x

  10. Yummo! I think this will make an appearance over the next week!

  11. Oh my Qld really needs to get with the times and get alcohol in the grocery aisles.

I have been buying my salmon like that for a while now (Woolies though) and find the portion sizes are great for my kids.

Will defn give that marinade a whirl for sure.

  12. Lovely, will try this.
We eat salmon once a week, just in the oven with olive oil and salt. But my 4 year old loves Salmon to death. He has it on his sandwiches at preschool (smoke salmon) and loves to eats the skin of it. I think it is because when I was pregnant with him, I made sure to eat salmon once a week. My 2 year old daughter also eats it with gusto but not the skin. Try it on your girls, they will love it, may be introducing them to salmon when you make pasta, white sauce and salmon (even canned salmon with mayonnaise and mixed with pasta shells).

  13. Well, it’s ABOUT time! I was beginning to think you’d gone all AWOL on the recipe section.. 😉

    Must try this!

  14. Don’t shoot the messenger…my local Aldi said the Moët was a limited stock only. Once gone, it wasn’t coming back. I know! Cry on my shoulder. I’m sorry.

  15. Our Aldi does not have the Moet – sad face – I guess it must have sold out super quickly – stock up Beth!

  16. What a fabulous recipe, you make it look super easy. I hate fish, hate cooking and eating it so I might pass this one on to the hubby because for once someone made it look tasty. Thanks for sharing.

  17. The salmon looks amazing!
Did you by chance spy the coffee machine at Aldi for $80…push button frother for $20…highly recommend, and yes I am fussy with my coffee…but LOVE pushing that button before the school run… bliss!

  18. Looks delish! We ate oodles of Salmon when we were living in Canada, cheep as….chips! Great way for the children to have it, mix up some dijon mustard/butter/honey, smear over salmon and then sprinkle cornflakes over the top and bake in the oven for 20 minutes. Fanfreakingtastic. The kids love it because it’s sweet and crunchy, I love it because it’s really bloody quick and easy.

  19. Now I want wedges for lunch. good one Beth!

  20. Salmon is would be my “final supper”. Love it so much, don’t have it often enough.

  21. *is would be? Ugh man flu making me write spackity.
