Just call me Bev: Risoni salad

Each and every time we have a large family or friend gathering that requires salads to be made, this is what I bring. It’s dead simple. It’s delicious. It works well with BBQ’d food, or as a side even with roast lamb. It’s a no brainer.

Risoni Salad
1 box risoni
1 lemon (zest & juice)
1 packet fetta
1 bunch dill
1 garlic clove
Olive oli & salt/pepps

: Boil the risoni until cooked, drain and rinse

: Finely chop a bunch of dill

: Zest a lemon and sprinkle over the top

: Take one packet of fetta and crumble it through your hands over the salad

: For the dressing grate/press the garlic, add one third lemon juice to two thirds oil. Salt & pepper and shake and pour over the salad. Mix with hands until the dill/fetta is evenly mixed through the salad. Enjoy!

    • My Mum is a marriage celebrant, although a wedding is probably not feasible I think we could arrange a “commitment ceremony” or the like surely?!

  7. You recken coriander instead of dill would be ok? Kids not fond of dill (adults are) or suggest another fresh herb?

    • As per my email I just sent you I don’t think corainder and fetta would be a great combo but try mint because mint & fetta are firm friends. Let me know how it goes!

  9. Yum – giving this one a go. While I’m here – my fuss pot daughter (9) LOVES that soup recipe you posted a few weeks back – thanks thanks. I love it too as it is so quick. And I always feel like we’re warding off colds and flu and maybe vampires with all that yummy garlic and ginger and herbs.

    • I am AMAZED at how many people made that soup…it’s fantastic! At least once every day someone, somewhere is making it! So glad you enjoy it – it’s one of Daisy’s favourite’s too.

  11. Delish. Sadly my hubby hates rissoni (I know, weird. Esp given he eats all other forms of pasta and rice). Will substitute rissoni for something else though, yum πŸ™‚

  16. I love risoni salad – we do one with cherry tomatoes, fetta, broad beans, capers, parsley and a dressing of (olive oil, tomato paste, red wine vinegar, balsamic, garlic and rosemary).

  17. If I just threw in the Meredith marinated feta from the jar would and squeezed the lemon in, would that be a super cheats way but still ok? Or would it be foul – sometimes my lazy girl ways ruin a meal.
