Just call me Bev: Cinnamon Tea Cake

When I knew that my Father in law was visiting and would be arriving at morning tea time I knew I just had to make his all time favourite – cinnamon tea cake. Had I made it before? No. Am I a good country woman that needs to trot out cake when people come visit? OF COURSE I am. Did I have all the ingredients in the cupboard? You betcha! So off we went. The original recipe was taken from here.

Cinnamon Tea Cake
: 65 grams softened butter
: 1/2 cup caster sugar
: 1 teaspoon vanilla extract
: 1 egg {room temp}
: 1.5 cups self raising flour, sifted
: 3/4 cup milk

Topping
: 3 teaspoons butter melted
: 1/2 teaspoon ground cinnamon
: 3 teaspoons caster sugar

I do believe that I am becoming a “proper” cook. The recipe called for 65 grams so I had a guess and look what happened when I chucked my guess on my new Aldi scales. 64 GRAMS MOFO’s!

: Place sugar, softened butter & vanilla extract into a mixer and blitz for a few minutes until it’s creamy and pale

: Add in egg and mix again for a minute or so

: Transfer mixture into a bigger bowl so you can sift in flour first {fold in} and then milk {mix in}. Keep little fingers away if possible.

: Place in greased round tin then into 180 degree oven for 30-35 mins or until skewer comes out clean

: In a separate bowl mix together sugar and cinnamon and then melt some butter

: Take cake out and place on rack {in tin} for 10 mins

: Then transfer onto plate and brush cake with butter & sprinkle with sugar/cinnamon mixture

: Serve while warm with big cups of tea in the sunshine

The expert {father in law} and Rob both concurred that the cake needed more cinnamon topping so I would double that as well as the cake mixture as it was a little flat. That, or use a smaller tin. A great excuse to make it again! Leftovers can use a little 10 secs in the microwave before serving and dead set it’s like a cinnamon donut. Beware…

  3. I make this all the time too. I agree, it does taste like a donut. Rarely we get the chance to reheat as it goes pretty quick. All for doubling the topping!

    Utterly random but I also highly rate the Aldi Danish mussels in a can. Yes really. Those babies deserve their own blog, I tell you.
