A lethal combination

Here is a perfect (yet dangerous) combination that we had on Tuesday night. Yes, a cheeky Tuesday. I drank too much between preparation and getting to table so forgot to take some snaps of the finished product. The beef was from our local butcher who has the most amazingly good tasting meat from their own farm. The beef actually tastes like, well, beef. We had some chunky home made chips served with this with lashings of maldon sea salt and I will admit that I ran out of olive oil so my simple salad that was to be served with this was ditched and we just had meat and potatoes. No greens. I know. As I said, cheeky Tuesday. Dessert was hot home made caramel sauce served over vanilla ice cream. Simple, yet perfectly comforting and yum.

The Bearnaise that I made was simple. SO simple:

100 grams butter melted & bubbling
1 dessert spoon of White wine vinegar
2 egg yolks

Whisk the white wine vinegar & yolks until combined and then drizzle in the bubbling butter slowly, slowly whisking all the time. You could even do this with a bar mix or food processor. Made about 1 cup but was all we needed.
